“Inaniwa Udon” of Akita is counted as one of the three major udon noodles in Japan. The history of this udon produced in Inaniwa-cho, Yuzawa City, Akita is said to start in 1665. Originally, high quality wheat was produced around this area. Therefore, the domain lord at that time ordered villagers to produce udon, and made them present the udon to the domain. After that, the udon became the local specialty representing the domain, and had been handled as a very luxurious product which ordinary people could not eat easily for a long time.

“Inaniwa Udon” is dried noodles made from only flour, salt, and water, without using oil. The tenobe (handmade) manufacturing method is used, in which the udon is carefully kneaded and rolled out by artisans. It is characteristically thinner than ordinary udon noodles. With the same method, “Inaniwa Somen” which is thinner than the udon is produced.
“Inaniwa Somen” is produced only during the cold season from January to March. As with “Inaniwa Udon”, It is an excellent product which has unique sticky but refreshing texture, and a feeling of noodles’ going down through the throat. You can enjoy the deliciousness slightly different from other somen noodles.
