Actually, “Tsumetai Niku-soba,” with a history of more than 80 years, was originally an off-menu item of local soba shop. They say it was originated by a customer who poured stewed horse meat--a relish--on cold soba noodles.
Currently, chicken meat is used for “Tsumetai Niku-soba.” The dish is characterized by Inaka-soba in a refreshingly cool soy sauce-flavored chicken broth and chicken meat toppings. The combination of rich broth with thick, chewy Inaka-soba offering strong taste of buckwheat is catchy.
