Takayama has several sake breweries that make delicious sake using the pure water and low air temperature of the Hida Mountains.
Among these breweries, the 200 year old Funasaka Sake Brewery in particular has made great efforts towards brewing truly great local sake. Advanced brewing technology devised over many long years by the brewer's predecessors has been inherited over many generations and used in the brewing work, which involves skilfully reading the behavior of microscopic organisms and steaming rice to make malt with the brewery's original techniques.
Sake from Funasaka Brewery has a rich, smooth flavor that you won't soon tire of, and is available in several varieties including Miyamagiku and Hida No Jingoro, so you can choose the one that suits you best.
